The Argentine-born, US-based artist is famous for his Hawk series of paintings, which represent the hunger of life and living it to the fullest. Aldo's is "dedicated to those who enjoy the good life," declares Olivier Castella, the restaurant's executive chef and director of food and beverage. And what's good life without good food? At the heart of Aldo's cuisine is delicious, healthy Mediterranean cooking, with its legendary emphasis on greens, fish, whole grains, fruits, and olive oil. A classic example is the Riviera Wellness Salad, featuring seared red tuna, soft cheese and plenty of yummy, antioxidants-rich fruits (kiwi, fig, mango, papaya); topped with four kinds of nuts and lemon extra virgin olive oil dressing. Try also the grilled red tuna, served with rocket and a fennel and vinaigrette sauce; or the Mediterranean lamb shank stew, slow cooked in red wine with olives and tomatoes. "During Songkran (the Thai New Year), we provided a wide selection of local delicacies, including young coconut and everyone's favourite 'Sticky Rice with Mango', local beer and juices, which were a hit with our guests and residents." A simple touch dial will connect you to the FBP operator and menus are available in the apartments. The service offers both Thai and international cuisines. "In Bangkok, food is always at the forefront of everyone's minds," says Mr Chen. "So we always aim to find something new or different for our guests and residents."
